How to Make Fruit Compote
Fruit compote is a healthier and more refreshing version of jam and a great way to liven up anything from English muffins to pancakes. I used strawberries in this recipe but the fruit component can be substituted with a variety of fruits, such as plums, raspberries, blackberries or blueberries. Many compotes are made with sugar, however I opted for a healthier version made with honey.

Prep Time: 5 minutes
Cook Time: 10-15 minutes
Total Time: 15-20 minutes
Servings: About 1 cup of compote
Ingredients:
1 ½ cups strawberries, halved
Juice from ½ a lemon
2 tablespoons honey
Directions:
1. Combine all ingredients in a small saucepan.
2. Bring mixture to a boil.
3. Once mixture is at a boil, turn heat down to low.
4. Let simmer for 10-15 minutes, stirring occasionally.
5. Remove from heat.
6. Store compote in the fridge for a maximum of 2-3 days.
